The Real Strawberry Pie 🍓

Hello everyone ! Welcome back ! Today I would like to share with you another recipe, actually one of my favourite: strawberry pie. I mean, a real one, not a diet one like I shared with you years ago, here is the link by the way if you’re interested. Read here.

For this recipe, you’ll need:

  • For the pie crust:
    • 250g of flour
    • 125g of butter
    • 50g of icing sugar
    • 1 egg
  • For the crème pâtissière:
    • 300mL of milk
    • 2 eggs and 1 yolk
    • 90g of sugar
    • vanilla sugar
    • 50g of corn flour
    • 75g of butter
  • Strawberries
  • More icing sugar

#1 Make the crust. Melt down the butter. Mix the flour with the sugar. Then add the butter and the egg. Let it rest for 1 hour in the fridge. Blind bake at 180°C until golden. Let it cool and get to the crème pâtissière.

#2 Make the crème pâtissière. Preheat the milk into a saucepan. Mix the eggs, yolk, sugar and corn flour together until you get a creamy mix. Add the heated milk et stir up. Put everything back into the saucepan. For 4 minutes constantly stir on medium heat. Keep stiring for 1 minute when rising up the temperature. Add the butter et mix until the mixture is very creamy. Pour out into a large bowl, cover and place in the fridge for at least 1 hour.

#3 Prepare the strawberries. Wash and cut the strawberries.

#4 Assemble the pie. Fill the pie dough with the crème, flatten, using a tablespoon. Place the strawberries on top. Finally dust with icing sugar (a very easy and simple way to elevate the look of your pie and make it look like made by a pro).
