Hello everyone ! Welcome back ! Today I would like to share with you one of my favourite Autumn recipe with butternut squash.
As usual this is a quite easy-to-make recipe that ends up yummy.
First you’ll have to wash your squash and cut it in 2. I would say 1 medium squash serves 2 people.
Remove the seeds and bake it in the oven (about 180°C) until the inside gets soft.
In the mean time, in a frying pan, cook some bacon and some chorizo slices with some butter and spices (for example paprika or Italian-styled mix).
Remove the squash from the oven when it’s cooked and let it cool down a bit so that you won’t burn yourself while removing the pulp.
For that I would recommend using a tablespoon. Make sure you don’t remove all the pulp to the skin, leave about 3/4 centimeter so that the squash keeps its structure.
Fill up with the bacon-chorizo mix and some cheese pieces, then cover it back with the pulp and smooth the top.
Place it place in the oven for about 15 minutes. This way all the flavors will melt together.
Instead of the bacon-chorizo mix, you can just stuff with bacon or chorizo only like I did, depending on your personal tastes. I haven’t tried the all-cheese option but no doubt the mixing between squash pulp and cheeses would be as delicious as heaven.

You can serve this dish alone since it’s quite nutrious by itself. However, with a simple green lettuce, it would be perfect.
