Homemade Sweet Potatoe-Chorizo Stir-Fry

Hello everyone ! Welcome back on the blog. Today I would like to share with you another stir-fry recipe of mine. I really like making these since it gives me a wide range of possibilities. You can throw whatever you want into the frying pan, whatever leftover you may found in your fridge, and 95% of the time you’ll end up with a delicious dish, easily cooked. What more can we ask ?

In today’s version, you’ll need only two major ingredients: sweet potatoe and chorizo.

First, wash up and peel off your sweet potatoes. Cut them into cubes (about 2cm-wide). Spread some butter and colza/sunflower oil into your frying pan and when it’s hot enough, add the cubes.

Regularly stir so that every cubes are evenly cooked and not burned. In the meantime, slice the chorizo, quite thinly.

When the sweet potatoe cubes are cooked, add the chorizo into the pan, with paprika powder, garlic powder, some soy sauce and any other spices you’re familiar with.

Give it a good stir for a few minutes, so that the flavours would mix into one another.

You can serve it by itself or as a side dish.
