2018 Christmas – Christmas Panettone

Hello everyone ! Hope you’re doing great. 🙂 Today, I’m back with a new recipe for Christmas. This one, I believe, is a very classic recipe of this time of year. It’s a panettone, a delicious Italian Christmas brioche with candied fruits and dried fruits. Here’s how to make yours.

You’ll need:
-500 g of flour
-150 g of butter
-150 g of candied fruits
-75 g of brown sugar
-15 g of bakery raising powder
-12 cl of warm milk
-12 cl of warm water
-1 handful of raisins
-1 pinch of salt
-2 eggs
-2 egg yolks
-1 lemon zest

#First, mix in one bowl the raising powder with the water and 30 g of sugar. Leave aside to let in double in volume.

# In a larger bowl, mix 300 g of flour with the rest of sugar, the lemon zest, the salt, the milk, the raising mixture, the eggs and egg yolks.

# Then, add the rest of flour with the melted butter.

# Knead the dough with your hands. Leave it in the bowl, cover with a towel and let it rest and rise for at least 1 hour.

# 1 hour later, add the fruits and raisins  and knead again.
For the baking, as I don’t have any oven, I used my multifunctionnal cooker. So, I took the cooker’s “mold”( sorry, I don’t know its name), placed some baking paper and the dough in. I covered it with the towel and left it to rise again for about 45 minutes. Then, I placed it in the cooker, chose the bread program and let it bake for 3 hours.  

#When it’s baked, let it cool down before removing the panettone from the mold and eat.
