Homemade Kiwi-Tangerine Pie

Hello everyone! A few days ago, as I was in the supermarket, looking for fruits, I noticed kiwis and tangerines. Seeing these two fruits reminded me of one pie recipe I “created” years ago. This is how I decided to make this pie and share it with you.

This recipe is divided in 3 steps :

-making and baking the crust

-making the custard

-assembling the pie

#For the crust, you’ll need:

-250g of flour

-130g of unsalted butter

-some water

Cut the butter in pieces and add it to the flour. Mix.

Add some water. Mix using your hands until you get a ball.

Keep it in the fridge for 20minutes.

Then, lay it in a buttered tin and bake it at 180°C. (Sorry I don’t remember how long, so simply check regularly)

To prevent the bottom from getting puffed up, use a piece of baking paper and some baking marbles. This way it’ll stay flat.

#Now, time to prepare the custard.

You’ll need:

-300ml of milk

-some vanilla extract

-2 eggs and 1 egg yolk

-90g of sugar

-2 sachet of vanilla-sugar

-50g of corn flour

-75g of unsalted butter

Heat the milk and the vanilla together in a saucepan. Then, remove from the fire and let infuse for 10 minutes.

In a separate bowl, mix together eggs, egg yolk, sugars and corn flour until it’s creamy.

Pour the milk into the mixing and stir. Pour everything back into the saucepan. Constantly stir for 4 minutes on medium heat. Then keep stiring for another minute while raising the temperature.

Add the butter and stir until you get a creamy mixture.

Pour the custard into a bowl, cover and keep it in the fridge for 1 hour.

#Assembling time!

When the crust and custard are both ready and cooled down, peel of your kiwis and tangerines. Using a sleeve pocket, fill the bottom of the crust with the custard. Then, display the fruits all over the custard. You may add some icing sugar on top for decoration.

Keep it in the fridge until serving.
