Homemade Congolais Coconut Cookies πŸͺ

Hello everyone ! Welcome back for another sweet recipe ! This time I wanted to share with you how to make one of my favourite cookies in the world, coconut balls more known in my country as Congolais (like the people of Congo) Cookies. Nowdays it’s getting almost forbidden to use this name and many people tend to forget about the original name and call them coconut balls/stars (it may change from places). However I keep calling them this way as I think it pays a beautiful hommage to this country, calling one of the most delicous cookies in the world after them. Another reason is that while we could commonly use this name, people would at least know about the existence of Congo and where it’s located. Now unfortunately more and more young people tend to forget about these simple facts, which sadden me. That’s why I keep saying Congolais.

I told you it was one of my favourite cookies and it’s not without reason. I love how the kinda bitterness of the coconut marries with the sweetness of the sugar. It results in a very sweet cookie, so sweet that if I eat too much of them in a short time, my teeth hurt. Furthermore, it’s a very easy recipe that doesn’t take too much time. A recipe like the ones we love around here !

Let’s get started !

For this recipe, you’ll need:

-200g of coconut powder

-150g of sugar

-3 eggs

Mix all the ingredients together until you get an homogeneous mixture. Let it rest for about 30 minutes.

Preheat the oven at 180Β°C. On a baking tray covered with baking paper, make some balls/mountains (whatever you wanna call them). There is the only problem of this recipe (according to me), since the easiest way to go through this step, is to use your hands and get them “dirty”. It’s a problem for me since I hate having my fingers glued together with food. But sometimes you have to do what’s necessary, don’t you ?

Bake them for about 15 minutes until the tops get golden.

Let them cool down and voila !

Now you can enjoy your delicious Congolais cookies !
