Homemade Salmon and Veggies Stir-Fry

Hello everyone ! Welcome back for a new recipe ! With Spring kicking out I’ve been feeling a lot better, more productive and more inspired around in my kitchen too. And it feels so good to be back to that mental state. Right now my brain is starting to overflow with ideas, new projects and so on. However I try to control that frenzy otherwise I would quickly feel unable to do anything due to lack of time, money etc, and then it’ll all hurt me instead of bringing me joy. Getting much better, but still a lot of progress has to be made.

So, today I would like to share with you another easy recipe of stir-fry, a mix of veggies and smoked salmon. So yummy. Let me show you how to make it.

You’ll need:

  • some potatoes
  • some carrots
  • some leek
  • and some smoked salmon

First peel off, wash and cut into cubes potatoes and carrots. Wash and cut the leek as well.

Cook all your veggies by steam-cooking, so that you can avoid any burning during stir-frying.

For the smoked salmon, I did used some of the one I made myself and stored into the freezer. Since I just cut the fillets into steaks, all I did for this recipe was to cut the steaks into cubes. But if you use slices it’ll work too.

When the veggies are cooked, pour some butter and oil into a frying pan and stir fry the veggies and then add the salmon. No need to add any herbs, spices or salt, since the salmon is already quite salty and tasty. Stir fry until the veggies get kinda golden.

Serve with some white rice.
