2019 Christmas Gingerbread Cake

Hello everyone! Here comes the traditional and annual Christmas Cake Post ! This year I wanted to try a recipe I’ve never made before, despite it’s a great classic: the gingerbread cake. So I look on the internet and found a recipe to try. Here is how I turned out.

You’ll need:

– 200g of flour

– 120g of brown sugar

– 50g of honey(I used creamy honey)

– 100g of unsalted butter

– 15cL of milk

– 1 egg

– 8g of gingerbread spices mix( I couldn’t find it so I made my own, I’ll explain later in the post how)

– 5g of raising powder

– 1 pinch of salt

– 150g of candied fruits

Directions :

#First, warm up the milk, honey and butter together until you get an homogeneous and liquid mix.

#Mix together the four, sugar, salt, raising powder and spices. For the spices, I made my own mixture, here is how. For one tablespoon of 4spices mix (cinnamon, ginger, clove and nutmeg), I added one teaspoon of cardamom and a pinch or two of cinnamon. I repeated the same process as much as possible to get enough spices for the recipe. So it may not be exactly like normal gingerbread spices mix, but at least it’s my own. 🙂

#When the milk is ready, remove it from the fire and gently add it to the flour mix, little by little. Mix well and add the egg. Mix well until you get a smooth mixture.

#This recipe isn’t mine, but I wanted to make it more like it was mine, so I decided to do things slightly different and added some candied fruits (150g in my case but it could be less or more)

#The recipe recommended to bake at 180°C for about 45 minutes in a preheated oven. In my case, as I don’t have an oven, I sticked with my multifunctional cooker. I chose the cake program and let it bake for 55 minutes.

#Finally, when it’s baked, let it cool down at least one hour.

I’m pretty happy with the final result. The texture, the color are perfect. Still the taste isn’t quite the same as for usual gingerbread cake. It’s not as sweet and you can feel the spices are strong. Next time I’ll use a different mix, and maybe another type of honey.

Actually, gingerbread cakes are very easy to make, the only difficulty is to find the perfect honey and spices mix to get the perfect taste.

But for a first, I think we can call it a winner!
