Hello everyone ! Welcome back for another zucchini recipe ! Last week I shared with you about my “struggles” with zucchini harvests and how to cook them. I told you I had to find new recipes to avoid being repetitive and always cook the same thing.
So today is kinda a continuation, with another zucchini recipe. Today, I would like to show you how to make a zucchini omelette, both easy and very healthy. The plus for me is that it uses good amounts of zucchini and eggs and doesn’t need other specific ingredients.
Let me show you !
For 3 persons, you’ll need:
- 1 medium zucchini (or large one, depending on the egg/zucchini ratio you like the most)
- 6 eggs
- some herbs and spices
#1 First of all, thinly grate the zucchini and dewater it in a strainer.
#2 Break and whisk the eggs and add some salt, herbs and spices.
#3 Add the grated zucchini. Mix well.
#4 Cook in a heated pan like you would usually cook a regular omelette.
