Welcome back everyone ! Hope you’re all fine. Today I would like to share with another very easy recipe, and very delicious too. I wanna share with you how to make a Salmon Parmentier. This recipe is rather quick, very easy and can be served to no-meat diets, like me during Lent time. Let me show you.
You’ll need:
- 1 salmon fillet
- potatoes
- 250g of mascarpone or cream cheese
- some butter
- some milk
On one side, peel and cook your potatoes. You can either boil them or steam them, like I do.
While potatoes are cooking, on the other side cook your salmon. You can easily put it in the oven under 180Β°C, on baking paper in a baking sheet, with a small bowl of water. The water is here to prevent the salmon for drying up during the cooking process.
When potatoes are cooked, pour them into a large mixing bowl, add some butter and a little bit of milk. And, using a fork or any other adequate tool, mash them until you get an homogeneous mix.
In an other bowl, place the salmon without the skin, with the mascarpone/cream cheese. Same idea, use a fork to mash everything together.
Finally, take a deep baking dish and make two layers: first the salmon mix, then the mash potatoes. Spread each layer equally everywhere so that you get a nice balanced dish.
Place it in the oven so that the top layer gets golden.
Ideally you can serve this dish with some lettuce.
And voila !
